Once a trailblazer for vegetarian dining in Palma, La Mujer de Verde has now fully embraced a plant-based identity. What began as a vegetarian restaurant with vegan options has transformed into one of the island’s most refined 100% vegan kitchens. Led by Paula, Carlos an their father Juanjo Ramírez, known for his long-standing role at Palma’s iconic Bon Lloc. LMDV now serves a changing lunch and dinner menu that reflects both creativity and deep-rooted culinary knowledge. The restaurant draws on locally sourced produce and global influences, without losing touch with its Mediterranean soul.
A Journey Through Flavors
A meal at La Mujer de Verde is a journey through flavors, textures, and a thoughtful approach to plant-based cooking. Today, the experience begins with tacos made with vegan pulled pork, served in homemade tortillas. And a vibrant tomato salad with grilled nectarine and blue cheese, in a dressing that elevates its simplicity.
Main courses change regularly, but a standout is the oven-roasted aubergine served with tahini, pomegranate seeds, cashews and a scattering of fresh herbs. It’s hearty, flavorful, and beautifully plated.
Textures, Balance, and Indulgent Desserts
Then come the desserts, an area where La Mujer de Verde truly shines. Their Avellana Remix is a hazelnut-lover’s dream, reminiscent of a plant-based Kinder Bueno meets Ferrero Rocher. Equally impressive is their reinvented lemon cake and crème brûlée with a nicely torched sugar crust.
If you end the meal with an espresso, the question of whether you would like another one appears at the bottom of the cup. But you are probably perfectly happy, by now.
Family Roots and a Legacy Reimagined in a New Generation
The story of La Mujer de Verde is deeply rooted in the culinary history of Palma. Its founder, Juanjo Ramírez, was the head chef at Bon Lloc, Mallorca’s first vegetarian restaurant, which opened in 1978. After Bon Lloc closed during the pandemic, Juanjo saw an opportunity not just to continue the legacy, but to reimagine it for a new era with his daughter Paula and his son Carlos.
Tradition, Transition, and the Taste of Now
Together, they opened La Mujer de Verde near Palma’s Porta de Santa Catalina, crafting a concept that’s modern, sustainable, and family-driven. Therefore, LMDV is more than just a great place to eat. The philosophy remains grounded in respect for nature while the execution is bold, joyful, and refreshingly innovative.
