Under the stars: Burger Lab

Main street burgers have hardly been a treat. But a few years ago young chefs started to launch cool burger joints in hot side streets. In Palma, Badal and Raimundo soon attracted a diverse crowd. The latter contributing largely to the development of Plaça Raimundo (sic) Clar. With his Burger Lab on emblematic boulevard El Borne Adrian Quetglas took the concept a step further.

In the shadow of the tall sycomore trees Burger Lab’s terrace is stage and auditorium at the same time. Some people simply enjoy the fabulous place having a drink or a coffee, maybe along with one of the various sweets from the vitrine. Burger aficionados though come for the real thing. Which is not simply a hamburger, of course.

Adrian Quetglas offers a selection of classic beef burgers but there is also chicken, fish and a vegetarian version on the menu. I like it hot so my personal favorite is the Taurus Mexican that comes with guacamole and a spicy ali oli. And I never miss a side dish of coleslaw. Actually, it’s the first thing I go for. All the more so because Burger Lab probably got one of the finest slaws on Mallorca.

No wonder, Burger Lab is kind of a side show itself. The founder is also the chef of the Michelin star restaurant of the same name. Sure, the food is completely different yet you feel the dedication to quality and taste at both places. And the pleasure to present a course – for example when the waiter injects the cheese into your burger with a jumbo syringe right at your table.

Democratizing great food is one of the guiding principles of Adrian Quetglas. With his restaurant on Passeig de Mallorca he already lives up to this idea. But in the end, what could be more democratic and popular than a decent burger?
